Product description
This oil is produced exclusively from Tsounati olives cultivated organically in the higher-elevation groves around Chania, Crete. Only this single cultivar is used, offering a consistent varietal character from tree to bottle.
Fruits were harvested and immediately cold-pressed at low temperature after the November 2025 harvest to preserve volatile aromatics. The result is a concentrated extra-virgin with distinct fresh-green notes and a lively mouthfeel.
Aroma and taste lean toward olive leaf, peppery rocket and green banana; the midpalate is characteristically bitter and substantial, with a long, stinging pepper finish that lingers at the back of the throat.
Use it raw as a finishing touch where a single variety can be appreciated: drizzle over fava, grilled lamb chops, charred peppers, a wedge of sheep’s milk cheese, or a slice of country bread sprinkled with sea salt.
This bottling won Gold at the 2025 Athena International Olive Oil Competition and was laboratory-certified at 2,081 mg/kg total phenols for the November 2025 harvest. The product is presented in a 500 ml dark glass bottle; keep it upright, cool and away from light, and reseal the cap after each use.

I received Lot 251124 (Harvest Oct 2023) and found the advertised phenolic figures didn’t match the documentation for this bottle. Packaging is premium, but I asked for the lot-specific HPLC/NMR report and it wasn’t provided; only generic marketing material came with the bottle.
