Constructed from high-carbon stainless steel, this 3.5-inch paring knife is part of Cuisinart’s classic forged triple-rivet line. The blade is tapered-ground to form a fine, precise edge intended for detailed work such as peeling fruit, trimming vegetables, segmenting citrus, and small slicing jobs.
The knife features a forged, extra-wide safety bolster that improves stability and offers a finger-rest for better control during close work. It has a full-tang blade secured by stainless steel rivets to an ergonomically shaped handle for a balanced feel in the hand. The set that this model belongs to is available both as open-stock pieces and in a 15-piece block configuration.

Pleasant in the hand
Comfortable grip and good balance. Substantial without being heavy, and it arrived sharp. I hand-wash it but it also survived a dishwasher cycle.

Fine for basement or garden use
I keep this cheaper knife where I process lots of tomatoes. The stainless blade doesn’t hold a mirror edge like premium steels, so expect to sharpen more often, but it works well and comes with a sheath to protect the blade.

Close to a high-end parer
I was hunting for a match to my favorite Japanese parer and this one came close. Not serrated, but very sharp and inexpensive. Time will tell how it re-sharpens, but so far I’m pleased.
